Slow Food and Regional Food
In the Lunch Lecture on Friday February 11 the fish processor Guðrún Pálsdóttir, from Flateyri, will discuss the Slow Food movement and how it can be beneficial for small companies like the one she and her family runs. Guðrún will also talk about the history of the Slow Food movement in Iceland and abroad. Last but not least she will discuss the project Veisla að vestan (A feast from the West), and the processing of dried fish in her company.
